3/4 c. whole wheat flour
1/2 tsp. baking soda
3/4 tsp. vanilla
1/2 tsp. cinnamon (I used more)
1/4 c. unsweetened applesauce
1/3-1/2 c. sugar (I used 1/3, thought it was enough)
3/4 c. oats
2 Tbsp. oil
1/4 c. raisins
1 egg
1/4 nuts or seeds
1/4 tsp. salt
Sift the salt, cinnamon, baking soda into the flour and oats. In another bowl, beat the oil and sugar, then add the applesauce,egg and vanilla and beat well. Combine the wet and dry ingredients and beat on medium speed until a semi stiff dough forms. It will be slightly sticky. Stir in raisins and nuts or seeds and mix well. Drop by teaspoon and flatten on a greased cookie sheet. Bake at 350 degrees for 10-12 minutes. Makes about 2 dozen, depending on the size.
